Gluten Free Events in May!

To kick off National Celiac Awareness Month this May, Harmons is hosting gluten free events at three of our locations—Station Park, City Creek, and Bangerter Crossing. All locations will offer free tastings and demos from 11 a.m. to 5 p.m. featuring a variety of delicious gluten-free foods from more than 15 vendors, including eight Utah’s Own companies. Our dietitians will offer free workshops about living a healthy gluten free lifestyle and our Cooking School Chefs will conduct free cooking demonstrations and samples. All three locations will also offer a hands-on gluten free cooking class the evening of the event – visit the Great Health Calendar or the Cooking School Calendar to register.

Free Educational Sessions available at all locations:
Celiac 101, 12:00 pm and 3:00 pm – For those who have questions about celiac disease and what a diagnosis means, Harmons dietitians will provide information on the progression of celiac disease, the importance of eating a gluten-free diet for life, and choices for nutritious foods that are gluten free.

Well-Balanced Gluten Free, 1:00 pm and 4:00 pm – Maintaining a well-balanced gluten-free diet can be confusing and time-consuming. Harmons’ dietitians will teach about gluten-free foods that are nutritious and taste delicious. Attendees will learn about special nutritional considerations on a gluten-free diet and how to meet nutrient needs.

Cooking Demonstrations
1:00 pm and 3:00 pm
Harmons’ Cooking School Chefs will demonstrate and provide tastings of delicious gluten-free recipes, and answer questions about cooking techniques and ingredients. One of Harmons’ dietitians will also be available to answer nutrition questions.

Almost everyone loves a great apple pie, a warm apple crisp and a crunchy pizza crust, but not everyone tolerates wheat flour, a common ingredient. Harmons has worked up proven and easy-to-make recipes. Come hungry. You’ll eat well. MENU: Apple pie, apple crisp, pizza with red sauce, plus lots of toppings.

Recipe Ready Turkey: Turkey Chili

Turkey Chili             

Chef Evan – Harmons Bangerter Crossing
Serves 8

2             cups Harmons Recipe Ready diced turkey
1              large sweet onion, chopped
2             cloves garlic
4             green onions, sliced thin
2             red bell peppers, chopped
2             tablespoons oil
2             teaspoons tomato paste
1 1/2       tablespoon chili powder
1              tablespoon coriander
1              teaspoon chile powder
1              teaspoon brown sugar
1              (28-ounce) can whole tomatoes in juice
1              (18-ounce) can black beans, rinsed and drained
1/2         cup beef stock, low sodium
Salt and pepper to taste

In a large pot, warm the oil over medium heat add the onions, garlic, and peppers.  Cook for 8 minutes so the flavors can meld.  Add the tomato paste, turkey, spices, sugar, and green onions.  Cook for another five minutes and then add the tomatoes, beans, and stock.  Bring the mixture to a boil and then reduce to a simmer.  Season with salt and pepper and continue simmering for thirty minutes.  Serve with cheddar cheese, sour cream, and avocados.

Recipe Ready Turkey: Roasted Turkey Breast with Fresh Figs and Kalamata Olives

Roasted Turkey Breast with Fresh Figs and Kalamata Olives

Chef Bob – Harmons Station Park
Serves 6

1               each  Harmons Recipe Ready boneless skinless turkey breast
1/4           cup  garlic — finely minced
1/2           cup  low sodium chicken broth
1               tablespoon  dried oregano
1/4           teaspoon  freshly ground black pepper
3               tablespoons  red wine vinegar
20            each  kalamata olives — pitted
3               tablespoons  capers — with some of the juice.
3               each  bay leaf
1/4           cup  brown sugar
1                cup  white wine
1 1/2         cups  fresh figs or 1cup dried figs — cut in half

In a large bowl, combine the turkey, broth, garlic, oregano, pepper, vinegar, olives, capers with juice, and bay leaves. Cover and refrigerate for at least 8 hours.

Pre-heat the oven to 350 degrees. Place the Turkey in a baking dish and cover with the marinade. Sprinkle with brown sugar and pour wine around the turkey. Bake 1 hour, or until the turkey reaches 165 degrees, basting every 10 minutes. After 15 minutes of cooking, add the figs. To serve, remove the bay leaves and transfer the turkey to a serving platter. Spoon the resulting sauce with the capers, olives, and figs, over the turkey.

Recipe Ready Turkey: Greek Turkey Burger

Greek Turkey Burger         

Chef Evan – Harmons Bangerter Crossing
Serves 4

1             pound Harmons Recipe Ready ground turkey
1             Harmons Greek chicken sausage
1/4         cup feta cheese
1/4         cup baby spinach
1             roma tomato
4            Ciabatta rolls
Salt and pepper to taste

Remove the casing from the sausage. In a medium bowl, combine the turkey and the chicken sausage.  On a warm grill, sear the burgers and cook until the internal temperature reaches 165 degrees.  Toast the rolls and place the feta, spinach, and tomato on the bun.  Place the burger on top and serve with a light salad.

Great Health Tip of the Day: Spice it Up!

When you think about foods high in antioxidants, fresh fruits and veggies are probably the first to come to mind.  But did you know that some herbs and spices are also rich in antioxidants?  Below are some herbs and spices that rank highest in important antioxidants:

  • Oregano:  Studies have shown that oregano has the highest antioxidant capacity when compared with thyme, sage, rosemary, sweet basil, and mint.  Often used as a topping for pizza or pasta, oregano is also a great addition sandwiches, salads, and casseroles.
  • Ginger:  Ginger has historically been used as a remedy for motion sickness and gastrointestinal ailments, but research also suggests that it may protect tissues and organs from oxidative damage.  Add ground ginger to fruit smoothies and cereal for a kick, or try adding to stir-fried veggies for Asian flare.
  • Cinnamon:  A versatile and common spice, cinnamon makes a great addition to oatmeal, toast, coffee, and even quinoa.  Cinnamon can also increase the sense of sweetness of foods without increasing the sugar.  And some research suggests that cinnamon may potentially have a positive effect on blood glucose control!

Try including different spices in your meals instead of salt, sugar or added fat for a punch of flavor without added calories or sodium.

Here at Harmons we are really excited about our new fresh Recipe Ready Turkey section. We use a locally raised turkey from here in Utah. Our turkeys also have no salt solution added so you just get good turkey. We have a variety of cuts including; drums, thighs, wings, tenderloins, bone-in or boneless breasts, breast strips, breast cubes, breast cutlets, and of course ground breast and thighs, to our delicious ground turkey. Every piece of turkey is hand cut and trimmed on a daily basis from whole turkeys for freshness – all of the extra skin and fat have been cut off so it’s ready for your recipe.

Recipe Ready Turkey: Turkey Drumstick Fricassee

Turkey Drumstick Fricassee

Chef Al – Harmons City Creek

4              Harmons Recipe Ready Turkey Drumsticks
1              Yellow Onion, diced
1              Carrot, diced
1              Celery stick, diced
1              branch of Thyme
1              12 oz Can of Diced Tomatoes
1/2          Cup Red Wine
4              Large Potatoes, 1 1/2 inch diced
1              Tbsp “Better than Bullion” Turkey Base
1/2          tsp black pepper

Mix all ingredients and place in a slow cooker for 4 to 6 hours or in a pressure cooker in high pressure for 30 minutes. Serve warm.

Recipe Ready Turkey: Turkey Stir-Fry

Turkey Stir-Fry

Chef Bob – Harmons Station Park
Serves 6

1              pound  Harmons Recipe Ready Turkey Strips — sliced thin
2             tablespoons  soy sauce
1              tablespoon  cornstarch
2             tablespoons  rice vinegar
2             tablespoons  Canola oil
1             tablespoon  garlic — minced
1             tablespoon  ginger — minced
2            tablespoons  oyster sauce
2            tablespoons  soy sauce
2            tablespoons  mirin
2           teaspoons  sugar
1            cup  snow peas — blanched
1            cup  baby carrots — blanched
cornstarch slurry

Combine turkey with soy sauce, cornstarch,and rice vinegar. Refrigerate and let marinate 20 minutes.
Heat the oil in the wok and cook the turkey with the ginger and garlic for 2 minutes.
Add the oyster sauce, soy sauce, mirin, and sugar and cook 1 minute.
Add the snow peas and carrots. Bring all to a boil and thicken with slurry.
