These beautiful cool fall days are making me crave one of my favorite meals – Soup! There is nothing better to take that chilly edge off after spending the day in the mountains looking at the changing kaleidoscope of colors than a well made soup. What makes a well made soup? Fresh ingredients, a hearty natural broth, and proper cooking technique. Let’s face it, we don’t always have the time or the ingredients to make our own fresh broths. Boxed broths that are low sodium, no msg, and organic are good substitutes. Always use fresh vegetables, never canned or frozen as they are already cooked and won’t impart nearly the flavor or texture that you’re looking for. Lastly, add your ingredients in the order that they need to be cooked from longest time to shortest. If all of this is a lot of information, you should take one of the many soups, chili’s, and stews classes being offered at any one of Harmons three cooking school locations. Make sure that when you plan on making soup to make enough to put some in your freezer. Also, remember to pick up Harmons artisan bread as the perfect winter soup accompaniment. Have fun cooking!
