pistachiosPistachios may not be the first nut that comes to mind when you think of health benefits, but don’t discount the “power of pistachios” just yet!

A one-ounce serving of pistachios is about 49 nuts, so get cracking!  A serving only provides 1.5 grams of saturated fat and is cholesterol free, making pistachios a heart-healthy snack.  You also get 160 calories, 3 grams of fiber, and 6 grams of protein, so snacking on pistachios will keep you feeling full and can help with weight maintenance.  Pistachios also include the antioxidants lutein and zeaxanthin, which are important for eye health.

For a new twist on pistachios, try using them as a coating for meat or an addition to grain dishes, like quinoa.
