Laura received her Bachelors degree in Biology from Calvin College in Grand Rapids, Michigan. She spent the following 18 months as an ecology field assistant surveying Georgia wetlands, measuring elk grazing in Colorado, and studying a tree fungus in Montana. As thrilling as collecting plant specimens sounds, she noticed her fascination with the nutrition of her vegetarian co-workers growing more than that of her ecology work.
In 2008, she moved to Utah to complete the Coordinated Master’s Program in Nutrition at the University of Utah. After graduating, she worked as a clinical dietitian at Lakeview Hospital. She has just finished an AmeriCorp VISTA year of service with Utahns Against Hunger as their Nutrition and Farmers Market Coordinator.
Laura looks forward to sharing her passion for healthy food with the Harmons community. She loves the positive effect that healthy, fresh food has on a community and individuals' well being. In addition to the City Creek Harmons, you may see Laura running and skiing in the Wasatch Mountains or biking around town.
