Monthly Produce Highlights

Produce is one those amazing categories of food that fits perfectly into Dietitians Choice. Instead of tagging every single item, the dietitians will do a monthly highlight within the department. The highlights will include a fruit, vegetable and herb of the month, fun and healthy kids activities, and recipes using the monthly items.

January Recipes:
Buddha's Hand Vinaigrette
INGREDIENTS:
1/4 cup olive oil
1/2 teaspoon salt
2 tablespoons lemon juice
2 tablespoons Buddha's Hand zest
1 tablespoon balsamic vinegar
1/2 teaspoon thyme (fresh or dried), minced
1 glove garlic, minced

DIRECTIONS:
Combine all ingredients together in a bowl. Whisk well. The flavor improves overnight.

Prepared Horseradish
INGREDIENTS:
Fresh Horseradish
White wine vinegar

DIRECTIONS:
Shred horseradish and place in a bowl. Add white wine vinegar until it covers the horseradish. Allow to marinate overnight.

Prepared horseradish makes a killer condiment.
Try it as a:

  • Topping for roast lamb or beef
  • Dip for seafood or shellfish
  • Base for a killer cocktail sauce
  • Zesty sandwich spread, alone or mixed with low-fat mayo
