Are artichokes really worth all the effort?

What makes them so healthy?

Artichokes contain a fiber called inulin, making them a great source of prebiotics. These prebiotics act as food for our good gut bacteria, contributing to our overall health. At only 25 calories a piece, artichokes are a good source of vitamin C, folate, and magnesium.

Try dipping artichoke leaves in a Dietitians Choice mayo or a Greek yogurt with garlic and lemon for a healthy, delicious snack.
