No Time? Try these 9 Meals on the Fly

It’s 4:30pm. Your stomach begins to rumble. The kids will be home from after school activities soon. The work day is nearly over. Do you know what’s for dinner?

For many of us, planning and preparing meals in advance feels like a pipe dream. Others aren’t sure where to start. The answer to the old “what’s for dinner” question often becomes takeout or fast food or pizza or other less-than-healthy convenience foods.

Not to worry! With a well-stocked pantry or quick stop at your local Harmons, you can throw a delicious meal together in just a few minutes.

One of my favorite meals on the fly is avocado toast. It’s so easy you can make it on the fly at work or school for lunch. Avocado toast is also super flexible. Don’t have a toaster? No big deal. Avocado on bread is surprisingly tasty. Add a sliced egg and you’re good to go.

While the fajitas are roasting, warm some tortillas, cut up some avocado, and you’ve got a gourmet meal ready to go.

Is shrimp a no-go? Check out these even faster chicken fajitas. With chicken and veggies already seasoned and ready to go, all you need is a pan, some oil, and your favorite toppings. Lately, I’ve been loving plain Greek yogurt as a substitute for sour cream (bonus: it’s higher in protein) and Harmons samole, which is a super convenient combination of our fresh made salsa and guacamole.

If you want southwestern flair but are looking for a more comforting meal, how about a 5 ingredient white chicken chili? In a mere 5 minutes you could have a complete meal! Add some interest by garnishing with cilantro and enjoy with tortilla chips or cornbread.

Craving Asian food? Look no further than this delicious beef stir fry. Tender strips of beef and vegetables are seasoned with sesame and ginger for a satisfying bite. Serve with brown rice (did you know you can cook this brand in 1 minute? ) for a complete meal.

Last but not least, pasta is an old standby for delicious meals on the fly. Pair grilled salmon, pesto, and green beans in this recipe that is ready in the time it takes to cook pasta.
