We love to 'go green' on this fun holiday! Why not extend this color theme to food and try a new green veggie or fruit?
Here are just a few possibilities:
Arugula
Dark, leafy green with a slight peppery flavor.
Add to soup, pasta, or salad or blend into pesto.
Broccolini
A cross between Chinese kale and broccoli that looks like baby broccoli. Flavor is milder and sweeter than regular broccoli. The stalks are tender and totally edible and pair well with Harmons Dilly Ranch Dip!
Steam, sauté or roast for just a few minutes.
Edamame
Means “green soybean” in Japanese, and literally, that is what it is! A great vegan protein option!
Add to salads or a stir-fry for a tasty protein boost, or purchase roasted edamame for a power snack!
Kiwi
Originated in China but commercial production began in New Zealand where this fuzzy-skinned fruit was named after the national bird. Did you know…two average kiwis provide more potassium than a banana?
Slice or chop as desired; great in salads, salsa, added to a fruit pizza, or enjoyed by itself.
