I’ve been on a real pistachio kick.  Not only are they wonderfully delicious and full of nutrients essential for good health, but they’re also fun to eat!  There’s something so satisfying about pulling open those shells to reveal their quirky green nut.  Pistachios are…

Full of mono-unsaturated fats which may help lower LDL cholesterol and increase good HDL cholesterol.
Rich in antioxidants like vitamin E which scavenge harmful free radicals.
Packed with 6 grams of plant-based protein power per 1 ounce serving.
Full of minerals in a relatively low calories package (159 per serving) compared to other nuts.

Expert tip: Pistachios can be a tough nut to crack. Put the thin tip of an already cracked shell into the stubborn pistachio’s crack and twist.  Voila…it pops right open!
