Welcome to the fourth episode of the Taste of Harmons podcast! This week we met with Chef Aaron and Dietitian Jonnell to talk about cooking oils. We’re answering the question: Why does what oil you cook with matter?

Every oil has a different smoke point which makes different oils perfect for different cooking methods. But what is a smoke point? It’s the temperature at which the oil stops shimmering and starts to burn. One of the most popular cooking oils is olive oil because, unless it’s extra-virgin olive oil, it has a smoke point of 465°-470°.
