15 Plant-Based Recipes from our Chefs and Dietitians

It’s the last day of our plant-based celebration at Harmons, but that doesn’t mean the fun has to stop! If you are trying to include more plant-based meals into your repertoire, know that most (if not all) food cultures have plant-based traditions in their heritage.  

Here are mouthwatering recipes crafted by our talented team of professional chefs and registered dietitian nutritionists. We included several different cuisines to show how diverse and flavorful plant-based eating can be. The recipes are either vegetarian or vegan (and all easily tweaked to make fully vegan). Avocado White Bean Chipotle Wraps include a few veggies quickly cooked in chipotle sauce, smashed avocado, and white beans, plus a touch of melty cheese come together in this Southwestern wrap perfect for lunch or dinner. Simply omit the cheese (you won’t miss it!) if desired.

Chickpea Frittata is a Spanish-style frittata that is vegan! Instead of eggs, chickpea flour and flaxseed come together in a delicious savory pancake. Enjoy for breakfast, lunch, or dinner.

Chickpea and Vegetable Curry is a hearty Indian-style curry filled with potatoes, veggies, and  seasoned to perfection. Substitute the cream for coconut milk if vegan. 

Coconut Lentil Stew is a Thai-style curry simmered with coconut milk and spices. Thai curry paste, garlic, ginger, and veggies make for an unforgettable meal. It stands alone but would also be great served with rice.

Cowboy Caviar is a Southwestern crowd pleaser. It’s a delicious light lunch or dip for chips when you need something more than salsa for your next party.

Curried Cauliflower with Chickpeas is a velvety, luscious dish perfect to wow your guests. Indian curry powder along with aromatics make this recipe unforgettable. 

Baked Falafel with Tahini Sauce is a Mediterranean classic of crispy, spiced chickpeas rolled into an addictive ball of goodness. Serve with tahini sauce over a salad or in warmed pita for a complete meal.

Kem Chuoi are Vietnamese Banana Coconut Pops. A fun, unique alternative for a frozen treat, the peanuts and coconut bring satisfying texture and crunch. They are positively addictive!

Korean Tofu Bowls are a complete meal in a bowl. The sweet and spicy sauce used to toss the tofu is so good, you will find yourself putting it on everything!

Melon Medley is a fresh take on fruit salad that takes advantage of fresh, seasonal melons. Use maple syrup instead of honey if vegan.

Mexican Chocolate Nice Cream is frozen banana treat you are sure to love! Chocolate, almonds, and spices add a unique twist to this sweet treat perfect for summer.

Moroccan Chickpeas are flavored with exotic spices like cumin, turmeric, and cinnamon. These are extra yummy the next day making them perfect for meal prep.

Red Lentil Daal is a flavorful and easy recipe filled with Indian flavors. Red lentils cook particularly fast (faster than green or brown) and don’t require a presoak. And it’s so easy! You basically dump everything into a pot and simmer for 40 minutes. That’s it! Serve with rice or warm naan if desired.

Thyme Roasted Marcona Almonds are the perfect Mediterranean snack or appetizer.

Wild Rice with Cherries and Pecans is a perfect side for summer grilling. Simply use veggie broth to make it fully plant-based.
