At Harmons, we only sell dry as opposed to wet-packed scallops that are commonly sold elsewhere. What makes dry-packed scallops so much better?
- Wet scallops are packed in a sodium solution which causes them to retain more moisture. Wet scallops can appear larger than dry scallops, but a lot of that weight you’re paying for is additional water rather than more meat.
- Wet scallops absorb some of the sodium they’re packed in, making them a higher sodium option than dry scallops
- Dry-packed scallops release less liquid during the cooking process. This gives them a browner crust after cooking.
- Dry-packed scallops tend to have a more delicate and tender texture compared to the rubbery texture you can get from wet-packed scallops.
