INGREDIENTS:
- 1 ripe banana
- 2 large eggs
- 1/2 tsp vanilla extract, (optional)
- Oil or butter
DIRECTIONS:
No sugar? No flour? No problem. These pancakes are just what you need. Easy, fast, and delicious.
In a medium bowl, mash banana with a fork until the banana looks like wet pudding and no large chunks remain. Add eggs and vanilla, if using, and mix well.
In a large nonstick pan over medium heat, spray pan with cooking oil or coat with a little butter. Spread 2-3 tablespoons of batter in pan for each pancake. Let cook for about 1 minute, and carefully flip. Let cook for another minute, or until done. Remove to a plate, and continue cooking the remaining batter.
Serve with your favorite pancake toppings.
