Aged Prime Steaks

INGREDIENTS:
  • 2 (6-8 oz) aged prime steak, such as New York or Ribeye
  • Salt and freshly ground pepper
  • 2 Tbsp canola or grapeseed oil
DIRECTIONS:

Season each steak liberally with salt and pepper.

In a grill pan over medium-high heat, warm oil. When oil is shimmering, add steaks and cook until grill marks appear, about 3 minutes. Using tongs, lift meat and turn 45° and cook until grill marks appear, 3 minutes. Turn over and cook until grill marks appear, about 3 minutes. Lift meat and turn 45° and cook until grill marks appear, 3 minutes for medium-rare. Serve with sauce.
