- 4 ripe peaches
- 1/3 cup whole almonds
- 1/4 cup sugar
- 1/4 cup rolled oats
- 1/8 tsp ground cinnamon
- Pinch of salt
- 3 Tbsp cold unsalted butter, cubed
- Vanilla gelato
Preheat oven to 350°. Halve peaches and remove pits. Place fruit, cut side up, in a baking dish.
In a food processor using the blade attachment, add almonds and sugar and pulse until coarsely ground. Add oats, cinnamon, salt, and butter, pulsing machine until ingredients are just blended. Spoon almond mixture into center of each peach, then press it flat.
Bake until top is brown and crisp and you can easily slice through fruit with a fork or spoon, 45 minutes to 1 hour. Serve warm or at room temperature with vanilla gelato.
