- 12 oz almond paste
- 1 1/8 cup granulated sugar
- 3 1/2 egg whites
- 1/8 tsp salt
- 1/2 cup powdered sugar
- 3 Tbsp flour
- 6 oz dark chocolate, chopped and melted
Preheat oven to 300°. Line a rimmed baking sheet with parchment or a silicone mat.
In the bowl of a stand mixer fitted with the paddle attachment, add almond paste and granulated sugar and beat until crumbly. Add egg whites, salt, powdered sugar, and flour and mix to combine. Transfer to a pastry bag and pipe circles 3” in diameter on prepared sheet.
Let sit for 20 minutes. Bake until firm and light brown, about 25-30 minutes. Let cool completely.
Dip half of each cookie in melted chocolate.
