Apple Arugula Salad with Kale Sage Pesto

Serves 4
INGREDIENTS:
  • 2 cups kale loosely packed
  • 1 sprig sage
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 apple thinly sliced
  • 1/2 cup cranberries sliced
  • 1/4 cup pumpkin seeds
  • 1/4 cup goat cheese crumbled
  • 4 cups arugula
DIRECTIONS:

Add all pesto ingredients to a food processor and pulse until combined. Add salt and pepper and adjust to taste. 

In a medium mixing bowl, add arugula and pesto and toss to combine. Transfer to plates and top with apples, cranberries, pumpkin seeds, and goat cheese.
