INGREDIENTS:
- 1 1/2 cups milk of choice
- 1 1/2 cups unsweetened applesauce
- 2 large eggs
- 1 Tbsp ground cinnamon
- 1 tsp ground nutmeg
- 8 oz Harmons artisan 7-grain bread, cut into 2" cubes
- 1 medium apple, diced
- 1/2 cup raisins
- 1/4 cup walnuts, chopped
- 1-2 scoops vanilla protein powder
- 1/4 cup plain greek yogurt
- 1/4 cup milk of choice
DIRECTIONS:
In a large bowl, add milk, applesauce, eggs, cinnamon, and nutmeg and beat lightly with a whisk until well incorporated. Fold in bread cubes, apple, raisins, and walnuts.
Transfer to oven-safe dish. Cover and refrigerate for at least 1 hour. This will allow bread to soak up liquid.
Preheat oven to 350°.
Bake bread pudding until set and top is golden brown, 45-50 minutes.
Remove from oven and allow to cool until it reaches room temperature. Cover and transfer to refrigerator once again to cool completely. (This pudding is best served cold.)
When ready to serve, in a bowl, combine protein powder and yogurt until well incorporated and smooth. Add milk and stir until creamy. Pour sauce over bread pudding.
