Apple-Cranberry Cobbler

Serves 6-8
INGREDIENTS:
  • Filling
  • 2 lb Gala or Fuji apples, peeled, seeded, and cut into 1/2" chunks
  • 1 2/3 cups fresh cranberries
  • 1 cup sugar
  • 1/4 cup unbleached all-purpose flour
  • 1 Tbsp orange zest
  • 2 tsp grated fresh ginger
  • 1/4 cup brandy
  • 1/4 tsp ground allspice
  • 2 Tbsp unsalted butter, cut into pieces
  • Topping
  • 3 Tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 Tbsp butter
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • Sweetened whipped cream, for garnish
DIRECTIONS:

Preheat oven to 425° and butter a 9″x13″ baking dish.

In a large bowl, add apples, cranberries, sugar, flour, orange zest, ginger, brandy, and allspice and stir to combine. Transfer filling to baking dish and dot with butter. Cover dish tightly with aluminum foil and bake 20 minutes. 

Meanwhile, make topping. In a bowl, add sugar, flour, baking powder, and salt and stir to combine. Add butter and break into small pieces until the size of peas. Add milk and egg and stir to combine.

Remove foil and break pieces of dough onto the top of filling. Return to oven and cook until topping is golden brown and set, cranberries burst, and apples are tender, 15-20 minutes. Garnish with whipped cream.
