Apple Pie Chia Pudding

Serves 2
INGREDIENTS:
  • 4 Tbsp chia seeds
  • 1 cup milk of choice
  • 1 tsp vanilla extract
  • 1 Tbsp pure maple syrup
  • 1/2 tsp apple pie spice
  • 1/2 Granny Smith apple, diced
  • 1/2 Tbsp butter
  • 1 Tbsp brown sugar
  • 1/2 tsp cinnamon
  • 2 Tbsp pecans or walnuts, chopped
DIRECTIONS:

In a small container with a lid, combine chia seeds, milk, vanilla, maple syrup, and apple pie spice. Refrigerate for at least a few hours, preferably overnight. Stir a couple of times throughout refrigeration to disperse seeds. Consistency should be pudding-like.

Before serving, in a small saucepan over medium-low heat, add butter, apples, cinnamon, and brown sugar. Cook until apples are softened, about 5 minutes. Spoon over pudding and top with chopped nuts.
