INGREDIENTS:
- 2 Tbsp olive oil
- 1/4 cup minced shallots
- 1 cup lightly steamed asparagus tips
- Salt and freshly ground pepper
- 5 eggs
- 2 Tbsp butter
- 1/2 cup grated parmesan cheese
- 1 Tbsp minced fresh flat-leaf parsley
DIRECTIONS:
In an ovenproof frying pan over medium-high heat, add oil. When oil shimmers, add shallots and cook until translucent, about 5 minutes. Transfer to a plate.
In a bowl, beat eggs, season with salt and pepper. In the same frying pan over medium heat, add butter. When butter melts, pour in egg mixture. Cook until bottom is set. Sprinkle shallots and asparagus over the eggs, add cheese and parsley and put under broiler, about 1 minute to finish cooking. Slide onto a plate and serve.
