Avocado Egg Salad

Serves 4
INGREDIENTS:
  • 1 avocado, halved, seeded, and peeled
  • 6 hard-boiled eggs
  • 1 Tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 onion, diced
  • 1/4 tsp salt
DIRECTIONS:

Chop eggs and set aside.

In a bowl, combine half of avocado, vinegar, mustard and salt; mash until smooth. Dice remaining avocado and add to mixture along with eggs and onion; mix gently.
