INGREDIENTS:
- 3 slices bacon, chopped
- 1 shallot, chopped
- 1 lb Brussels sprouts, trimmed and blanched
- Salt and freshly ground pepper
- 2 Tbsp chicken broth
DIRECTIONS:
In a medium frying pan over medium-high heat, add bacon and cook until crisp and brown, about 7 minutes. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Add shallots to the pan and cook, 2 minutes. Add Brussels sprouts to the pan. Cook sprouts until beginning to soften, about 4 minutes, then add broth. Season with salt and pepper and cook until fork tender. Transfer sprouts to a serving dish with a slotted spoon and top with cooked bacon bits.
