Baked Apples With Almonds and Oats

Serves 4
INGREDIENTS:
  • 4 apples, such as Fuji or Gala
  • 1/3 cup whole almonds
  • 1/4 cup sugar
  • 1/4 cup rolled oats
  • 1/8 tsp ground cinnamon
  • Pinch of salt
  • 3 Tbsp cold unsalted butter, cubed
  • 1 cup apple juice
  • Vanilla ice cream
DIRECTIONS:

Preheat oven to 350°. Butter a 9”x9” baking dish.

Remove core from each apple, without going through bottom of apple. Use a paring knife to remove some of apple flesh from center of each apple.

In the bowl of a food processor fitted with the blade attachment, add almonds and pulse until coarsely chopped. Add sugar, oats, cinnamon and salt and pulse a few more times. Add butter and pulse a couple of times.

Fill each apple with filling. Pour 1 cup of apple juice in prepared dish. Add apples to dish and bake until bubbly and golden brown, 40-45 minutes. Let cool 10 minutes before serving. Serve with ice cream.
