INGREDIENTS:
- 1 cup sugar
- 1/4 cup (1/2 stick) unsalted butter, softened
- 1 2/3 cups (about 3) mashed ripe bananas
- 1/4 cup nonfat milk
- 1/4 cup reduced-fat sour cream
- 2 egg whites
- 2 cups unbleached all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- Cooking spray
- 2 1/2 Tbsp half-and-half
- 2 oz semisweet chocolate, finely chopped
DIRECTIONS:
Preheat oven to 350°.
In a bowl, combine sugar and butter and beat with a mixer at medium speed until well blended. Add banana, milk, sour cream and egg whites.
In a small bowl, combine flour, baking soda and salt. Add flour mixture to banana mixture and stir until just blended. Spoon batter into loaf pan coated with cooking spray.
Bake until a wooden pick inserted in center comes out clean, about 1 hour. Cool in pan 10 minutes.
Place half-and-half and chocolate in a bowl and place over a pot of simmering water and stir until melted. Cool slightly and drizzle over bread.
