INGREDIENTS:
- 1 cup low-fat plain yogurt
- 2 ripe bananas
- 2 eggs
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips
- Peanut butter, for garnish, optional
DIRECTIONS:
Preheat oven to 400° and line a muffin pan with paper liners. Set aside.
In a blender or food processor, add all ingredients except for chocolate chips and blend on high until batter is smooth. Stir in chocolate chips. Pour batter into prepared muffin pan, filling each liner about 3/4 full. Bake until tops of muffins are golden and a toothpick inserted into the middle comes out clean, 15-20 minutes. Let cool 10 minutes. Top with peanut butter, if using.
