INGREDIENTS:
- Salt
- 8 small new red potatoes
- 6 Tbsp butter
- Freshly ground pepper
- 1 Tbsp fresh chopped chives
DIRECTIONS:
Bring a medium pot of water to a boil. Add 2 tablespoons salt to water and add potatoes. Lower heat to a simmer and cook until potatoes are tender when pierced with a knife, about 20 minutes.
In a frying pan over medium-high heat, melt butter. Add potatoes and toss to combine. Season potatoes with salt and pepper. Using a large fork, smash potatoes until flattened slightly. Sprinkle with chives.
