Butter Mashed Potatoes

Serves 12
  • 5 lb red skin potatoes
  • 1 lb butter
  • 2 tsp salt
  • 1/2-3/4 tsp freshly ground white pepper
  • 1/4 cup heavy cream

Wash and dice potatoes into 1” cubes.

Place potatoes into a large pot of cold water over high heat. Bring to a boil and cook until potatoes are very soft, but not falling apart.

Drain potatoes into a colander and allow to steam for 3 minutes to allow all the excess moisture to escape the potatoes.

Return potatoes to pot, add in all remaining ingredients and mash with a potato masher. Season with salt and white pepper.
