- 2-3 Tbsp water
- 1 cup (2 sticks) butter, cut into tablespoons
- 2-4 lobster tails
- 1 Tbsp chopped fresh chives
- 4 slices lemon
In a saucepan over medium heat, bring water to a simmer. Whisk in 1 tablespoon butter, when butter melts add another piece. Continuing adding butter pieces, two sticks total. Do not let butter come to a boil or butter will separate.
Add lobster tails. Cook for 6-8 minutes and turn tails in butter mixture. Make sure butter does not come to a boil, reduce heat if necessary. Be careful not to overcook lobster. Poached lobster tails should have an internal temperature of about 140-145°. Add chives and toss to combine. Serve with lemon.
