INGREDIENTS:
- 1 1/4 lb carrots, peeled and diced
- 3/4 cup macadamia nuts
- 2 Tbsp canola oil
- 2 Tbsp maple syrup
- 1 Tbsp miso
- 2 tsp vanilla extract
- Salt and freshly ground pepper
DIRECTIONS:
Bring a pot of water to a boil. Simmer chopped carrots until very tender, about 15-20 minutes.
Drain carrots and place in a blender with macadamia nuts and oil. Add maple syrup, vanilla, and miso and puree until a smooth, whipped texture is achieved, stopping to scrape down sides with a knife as necessary. Season with salt.
