Cashew Miso Sauce

Serves 8
  • 1 cup cashews
  • 1 Tbsp nutritional yeast
  • 1 1/2 Tbsp rice vinegar
  • 1 clove garlic
  • 1 Tbsp lemon juice
  • 1/2 cup water
  • 2 Tbsp yellow miso paste

Soak cashews in water for at least 30 minutes. Drain. Add to blender along with all other ingredients until very smooth.  Thin with more water to desired consistency.  Season with more lemon as desired.

This creamy sauce is great on roasted vegetables or as an alfredo sauce alternative.  It’s packed with healthy fats from cashews and is creamy as can be. The miso paste and nutritional yeast give it a satisfying umami flavor.
