Cheese Tapas, Three Ways

INGREDIENTS:
  • Cheddar Checkers ingredient's
  • 3-4 oz. cheddar cheese cubed
  • 3-4 oz. Havarti cheese cubed
  • 1 tsp agave
  • 2 leaves fresh basil chiffonade
  • salt to taste
  • pepper to taste
  • 1/2 cup extra virgin olive oil Sciabica's brand recommended
  • 1 Tbsp white wine vinegar
  • 1 Tbsp jarred pimentos diced
  • 2-3 sprigs chives chopped
  • 2 cloves garlic minced
  • 1/2 lemon zested
  • Marinated Feta Cheese Ingredients
  • 7 oz. feta cheese
  • 1/2 cup lemon infused olive oil Sciabica brand recommended
  • salt to taste
  • pepper to taste
  • 1 tsp. red pepper flakes
  • 1 sprig fresh rosemary chopped
  • 1-2 sprigs fresh thyme chopped
  • 1-2 leaves fresh basil chopped
  • 1 Tbsp balsamic vinegar
  • 1 tsp agave
  • 2 cloves garlic minced
  • 2 Tbsp pomegranate arils for garnish
  • 12 kalamata olives pitted and sliced, for garnish
  • ground peppercorn for garnish
DIRECTIONS:

Cheddar Checkers Directions 

  1. Using a small plate, arrange cheese cubes in a checkerboard pattern.
  2. Combine the rest of the ingredients to make the marinade.
  3. Pour marinade over the cheese, cover, and refrigerate overnight.
  4. Serve with crackers.

Marinated Feta Cheese Directions

  1. Mash the feta on a small plate with a fork.
  2. Combine the rest of the ingredients except the pomegranate and olives.
  3. Pour the marinade over the cheese, garnish with the last three ingredients. Refrigerate for at least an hour.
  4. Serve with a variety of crackers and bread.

Grilled Halloumi Directions

  1. Grill the cheese on both sides until nicely browned.
  2. Arrange slices in a shingle pattern on a platter.
  3. Garnish with pepper, salt, chives, and drizzle with oil.
