Chicken Lettuce Wraps

Serves 4
INGREDIENTS:
  • 2 heads butter lettuce, leaves separated
  • 1 whole rotisserie chicken, meat removed and shredded
  • 1 (8 oz) can water chestnuts, rinsed, drained, and chopped
  • Sweet Thai chilli sauce
  • Lime wedges
  • Cooked brown rice, warmed
DIRECTIONS:

Divide lettuce leaves, shredded chicken, and water chestnuts among 4 plates. Drizzle Thai chilli sauce and a squeeze of lime. Fold each lettuce leaf like a burrito. Serve with rice.
