INGREDIENTS:
- 1/4 cup extra-virgin olive oil
- 1/4 red onion, thinly cut
- 1/4 cup champagne vinegar
- 3 Cara Cara oranges, cut into segments
- 6 blood oranges, cut into segments
- 2 oz sheep's milk feta, crumbled
- 1/3 cup coarsely chopped pistachios
- 1 bunch fresh mint, coarsely chopped
- 1 (6 oz) pkg yellow beets, coarsely chopped
- Salt and freshly ground pepper
DIRECTIONS:
In a small frying pan over medium-high heat, add oil. Add red onion and cook until translucent, about 5 minutes. Let cool.
In a bowl, add vinegar and slowly whisk in oil and onions.
In another bowl, combine oranges, feta, pistachios, mint, and beets. Drizzle some of oil-vinegar mixture over top, season with salt and pepper and toss to combine.
