Citrus Feta Salad

Serves 4
  • 1/4 cup extra-virgin olive oil
  • 1/4 red onion, thinly cut
  • 1/4 cup champagne vinegar
  • 3 Cara Cara oranges, cut into segments
  • 6 blood oranges, cut into segments
  • 2 oz sheep's milk feta, crumbled
  • 1/3 cup coarsely chopped pistachios
  • 1 bunch fresh mint, coarsely chopped
  • 1 (6 oz) pkg yellow beets, coarsely chopped
  • Salt and freshly ground pepper

In a small frying pan over medium-high heat, add oil. Add red onion and cook until translucent, about 5 minutes. Let cool.

In a bowl, add vinegar and slowly whisk in oil and onions.

In another bowl, combine oranges, feta, pistachios, mint, and beets. Drizzle some of oil-vinegar mixture over top, season with salt and pepper and toss to combine.
