- Cooking spray
- 1 Cornish game hen
- Salt and freshly ground pepper
- 2 sprigs fresh rosemary
- 1/4 cup preserves, such as fig or jalapeno jelly
- 1/4 cup vegetable or chicken broth, marsala, sherry, or port
Coat inside of a 3 1/2-quart slow cooker with cooking spray. Liberally sprinkle hen with salt and pepper. Insert rosemary into cavity. Transfer hen to slow cooker.
In a small bowl, combine preserves and broth and pour over hen. Cover and cook on High for 5 hours. Taste, and season again with salt and pepper. Serve sauce over hen.
