INGREDIENTS:
- 1 (15 oz) can low sodium black beans, rinsed and drained
- 1 (15 oz) can black eyed peas, rinsed and drained
- 1 cup diced tomatoes
- 1 jalapeno, seeded and finely chopped
- 1 cup corn
- 1 avocado, diced
- 3/4 cup finely diced green pepper
- 1/2 cup finely diced red onion
- 1/3 cup olive oil
- 1/4 cup fresh lime juice
- 1 Tbsp honey
- 1 tsp chili powder
- 1 tsp ground cumin
- Salt and freshly ground pepper
DIRECTIONS:
In a large bowl, add beans, peas, tomatoes, jalapeno, corn, avocado, bell pepper, and onion.
In a small bowl, whisk olive oil, lime juice, honey, chili powder, cumin, salt and pepper. Pour dressing over bean mixture and toss gently. Serve with tortilla chips or as a side.
