Cranberry Mojito

Serves 4
INGREDIENTS:
  • Simple syrup
  • 8 oz fresh cranberries
  • 1 cup sugar
  • 1 cup water
  • 10 mint leaves
  • 1 Tbsp lime juice
  • 2 oz Cranberry Simple Syrup
  • 2 oz rum (optional)
  • Seltzer water
DIRECTIONS:

In a medium saucepan over medium heat, add cranberries, sugar, and water and let simmer, 10 minutes. Do not let mixture boil or let cranberries burst. After all the sugar is dissolved, remove pan from heat and let cool to room temperature.

In a tall glass, add mint leaves and lime juice. Muddle slightly to release mint oils. Fill glass with ice and add 2 ounces cranberry simple syrup and 2 ounces rum, if using. Top with seltzer water and add fresh cranberries for garnish.
