INGREDIENTS:
- 2 (7 oz) pkg firm tofu
- 1 cup roasted cashews
- 3 cloves garlic
- 4 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 2 Tbsp onion powder
- 2 tsp black pepper
- 1 tsp salt
- 1/3 cup fresh dill
- 1/4 cup green onions
- 3 tsp dried basil
- 1 egg
- 1 whole wheat bagel
DIRECTIONS:
Press tofu to drain some of water. Use a dish towel to dab dry. Add tofu, roasted cashews, lemon juice, apple cider vinegar, garlic, spices and herbs to a blender and pulse until smooth.
Transfer dip to an airtight container and store in the refrigerator for 1 hour, or until set.
Spread creamy tofu on toasted bagels. Top with a sunny side egg and your choice of vegetables.
