INGREDIENTS:
- 1 Tbsp mustard seeds
- 1/4 cup unsweetened applesauce
- 1 Tbsp plus 3/4 cup plain yogurt
- 5 Tbsp mango chutney, mashed if chunky, divided
- 3 tsp curry powder, divided
- 3/4 tsp salt
- 1/4 tsp cayenne pepper
- 1 lb ground turkey
- 7 Tbsp chopped green onion tops, divided
- 7 Tbsp chopped fresh mint, divided
- 1/4 cup finely chopped Granny Smith apple
- Cooking spray
- 4 (5"-6") pita breads
- Shredded romaine lettuce
DIRECTIONS:
In a frying pan over medium heat, add mustard seeds and toast until seeds begin to pop, about 2 minutes. Transfer seeds to a medium bowl. Add applesauce, 1 tablespoon yogurt, 2 tablespoons chutney, 2 teaspoons curry powder, salt and cayenne and stir to combine. Add turkey, 4 tablespoons green onions, and 4 tablespoons mint. Shape into 4 (3/4”) thick patties.
In a small bowl, combine apple, remaining 3/4 cup yogurt, remaining 3 tablespoons chutney, remaining 1 teaspoon curry powder, remaining 3 tablespoons green onions, and remaining 3 tablespoons mint.
Set grill to medium-high heat. Using tongs and a wad of paper towel dipped in oil, lightly coat grill. Grill turkey burgers until cooked through and an internal meat thermometer registers 165°, about 5 minutes per side. Cut 1 end off each pita; fill with 1 burger, some lettuce and 1/4 of apple-yogurt mixture.
