DIY Taco Salad Bowls

Serves 1
INGREDIENTS:
  • 2 leaves romaine lettuce, torn into pieces
  • 1/8 cup shredded sharp cheddar cheese
  • 1/4 cup shredded cooked rotisserie chicken
  • 2 Tbsp black beans
  • 1 Tbsp mild salsa
  • 1/4 cup cubed cucumber
  • 1/2 avocado cut into pieces
  • 5 tortilla chips broken into pieces
  • Salt and freshly ground pepper
DIRECTIONS:

In a sealable container, add lettuce, cheese, chicken, beans, salsa, cucumber, avocado and tortilla chips. Season with salt and pepper. Place the lid on the container and shake to combine.
