Flourless Peanut Butter Cookies

INGREDIENTS:
  • 1 cup natural peanut butter
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg, lightly beaten
DIRECTIONS:

Preheat oven to 350° and place racks in upper and lower third of oven.

In a medium bowl, combine peanut butter, sugar, vanilla, and egg. Spoon 1 tablespoon of mixture about 1″ apart onto baking sheets. Flatten mounds with tines of a fork, making a crosshatch pattern on cookies. Sprinkle coarse salt on top of cookies.

Bake until golden around edges, about 10 minutes, switching position of sheets halfway through baking. Transfer to racks to cool. Repeat with remaining dough.
