French Carrot Salad

Serves 4
INGREDIENTS:
  • 2 tsp Dijon mustard
  • 1/2 lemon, juiced
  • 3 Tbsp extra-virgin olive oil
  • 2 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 lb Harmons spiralized carrots
  • 2 Tbsp chopped fresh Italian flat-leaf parsley
  • 2 Tbsp minced shallots
DIRECTIONS:

In a bowl, combine mustard, lemon juice, honey, oil, salt and pepper. Add carrots, parsley, and shallots and toss well. Taste and adjust seasoning. Cover and refrigerate until ready to serve.
