INGREDIENTS:
- 2 tsp Dijon mustard
- 1/2 lemon, juiced
- 3 Tbsp extra-virgin olive oil
- 2 tsp honey
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1 lb Harmons spiralized carrots
- 2 Tbsp chopped fresh Italian flat-leaf parsley
- 2 Tbsp minced shallots
DIRECTIONS:
In a bowl, combine mustard, lemon juice, honey, oil, salt and pepper. Add carrots, parsley, and shallots and toss well. Taste and adjust seasoning. Cover and refrigerate until ready to serve.
