Gluten-Free Peanut Butter Energy Bites

  • 1 1/2 cups rolled oats
  • 1 1/2 cups gluten-free pretzels
  • 1/2 cup unsweetened, shredded coconut, toasted
  • 1/4 cup flax meal
  • 1/2 cup peanut butter
  • 1/4 cup coconut oil, softened
  • 1/4 cup agave syrup

Pulse the oats and pretzels in a food processor until it is lightly crushed.

Mix all ingredients together until combined. Shape into balls. Chill in the refrigerator or freezer for 20-30 minutes.
