INGREDIENTS:
- Sauce
- 1 Tbsp olive oil
- 1 yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 lb ground turkey
- 1 tsp paprika
- 1 tsp Italian herbs
- Salt and freshly ground pepper
- 16 roma tomatoes, stems removed, halved, deseeded, and coarsely chopped
- 2 zucchini, stems removed, cut lengthwise into thin slices
- Topping
- 10 oz Greek yogurt
- 2 eggs
- 3 oz grated cheese, such as parmesan, divided
DIRECTIONS:
Preheat oven to 375°.
In a nonstick frying pan over medium-high heat, add oil. When oil shimmers, add onion and cook until beginning to brown, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add turkey, season with salt and pepper, paprika, and Italian herbs and cook until meat is no longer pink, about 7 minutes.
Add tomatoes and let simmer for about 15 minutes.
In a 9″x13″ baking dish, add enough sauce to cover bottom of dish. Arrange zucchini slices over sauce. Cover with sauce again, add more zucchini and end with a layer of sauce. Top with a mixture of yogurt, eggs, grated cheese, salt, pepper, and garlic and bake until bubbly, about 40 minutes.
