INGREDIENTS:
- 1 lb Harmons bruschetta
- 2 Tbsp thinly sliced fresh basil
- 1 tsp balsamic vinegar
- Salt and freshly ground pepper
- 2 Tbsp canola oil
- 4 boneless, skinless chicken breast halves, pounded to 1/2" thickness
- 1/4 lb Harmons fresh mozzarella cheese, sliced
DIRECTIONS:
In medium bowl, add bruschetta, basil, balsamic vinegar, and season with salt and pepper. Set aside.
In a large frying pan over medium heat, add oil. Season chicken with salt and pepper, add chicken to pan and cook until golden brown on one side, about 7 minutes. Turn over and cook until golden brown on second side and internal temperature registers 165°. Reduce heat to low.
Top chicken with sliced mozzarella cheese and spoon bruschetta over cheese. Cover pan with a lid until cheese has melted, about 3 minutes.
