Guinness Flapjacks

Serves 12 (4") Flapjacks
INGREDIENTS:
  • 1 cup unbleached all-purpose flour
  • 1 tsp salt
  • 3 tsp baking powder
  • 2 tsp sugar
  • 1 tsp ground cinnamon
  • 3/4 cup buttermilk
  • 1 large egg, separated
  • 1/2 cup plain Greek yogurt
  • 1/4 cup (1/2 stick) butter, melted
  • 1/2 cup stout beer, such as Guinness
  • 1 tsp vanilla
  • Butter for melting
  • Maple syrup, warm
DIRECTIONS:

In a large bowl, combine flour, salt, baking powder, sugar, and cinnamon.

In another bowl, combine buttermilk, egg yolk, yogurt, and butter. Add beer and vanilla and whisk to combine. Add wet ingredients to dry ingredients and whisk until blended.

In a small bowl, whisk egg white until soft peaks form. Add to pancake batter and fold until incorporated.

Heat a griddle or frying pan over medium to medium-high heat. Test with drops of water which will sizzle when dripped onto griddle surface, but not evaporate immediately. Add 1 tablespoon butter to griddle and let melt.

Pour batter onto griddle to form circles. Cook until pancakes get bubbly and begin to get dry around the edges, about 2 minutes. Flip and cook other side, about 2 minutes. Transfer to a plate and repeat with remaining batter. Serve with butter and maple syrup.
