Healthier Pancakes

Serves 6-8
INGREDIENTS:
  • 1 cup white whole wheat flour
  • 1 Tbsp baking powder
  • 2 Tbsp sugar
  • 1/4 tsp salt
  • 1/2 cup low-fat cottage cheese
  • 2/3 cup skim or 1% milk
  • 2 eggs, separated
  • Canola oil
  • Maple syrup, jam, honey, warmed peanut butter or fresh fruit
DIRECTIONS:

In a medium bowl, add flour, baking powder, sugar and salt and stir to combine. Add cottage cheese, milk and yolks and stir to combine.

In a small bowl, whisk egg whites until they reach stiff peaks. Add beaten egg whites to flour-cottage cheese mixture and gently fold until combined. On a lightly oiled griddle, heat over medium-high heat. Pour batter onto griddle into rounds. Cook until batter bubbles and edges are dry, about 2 minutes. Turn over and cook other side until golden, 1-2 minutes. Repeat with remaining batter.
