Herbed Feta Dip

Serves 1 1/4 cups
  • 6 oz feta
  • 1/2 cup finely chopped fresh flat-leaf parsley
  • 1/4 cup finely chopped fresh mint
  • 2 Tbsp finely chopped fresh dill, plus torn sprigs for serving
  • Salt and freshly ground black pepper
  • Olive oil
  • Endive leaves, for dipping
  • Icicle radishes, for dipping
  • Sugar snap peas, for dipping
  • Baby cucumber quarters, for dipping

In a food processor fitted with blade attachment, blend feta and a splash of water. Transfer to a bowl and add parsley, mint, and chopped dill. Season with salt and pepper and stir to combine. Drizzle with oil and top with dill sprigs. Serve with vegetables for dipping.
