INGREDIENTS:
- 2 cups whole milk
- 1/2 lemon, juiced
- 1/4 tsp salt
- 1 Tbsp honey
- lemon zest for garnish
- mint leaves for garnish
DIRECTIONS:
In a small saucepan over medium heat, combine milk, salt and lemon juice. Let heat to a low simmer, stirring occasionally. Once small curds start forming, remove from heat. Line a small strainer with a cheese cloth and pour mixture onto cheese cloth. Allow about 30 minutes for cheese to strain.
Once strained, divide ricotta cheese among 4 small spoons. Drizzle with honey and garnish with lemon zest.
