INGREDIENTS:
- 2 Tbsp olive oil
- 1/2 yellow onion
- 1 stalk celery
- 1 carrot
- 1 lb ground beef
- 1/2 lb ground pork
- 1 Tbsp Worcestershire sauce
- 1/2 cup plain breadcrumbs
- 2 eggs
- Salt and freshly ground pepper
- 1 Harmons Jalapeno Cheddar Cheeseball
- 1 cup ketchup
DIRECTIONS:
Preheat oven to 375°.
In a frying pan over medium-high heat, add oil and lightly spray a loaf pan with cooking spray.
In the bowl of a food processor fitted with the blade attachment, add onion, celery, and carrot and pulse until finely chopped.
When oil shimmers, add chopped vegetables and cook until tender, about 8 minutes. Remove from heat and let cool.
Place cheeseball in center of a piece of plastic wrap. Collect ends of plastic and roll until cheeseball forms a long, thin cylinder.
In a large bowl, add vegetables, beef, pork, Worcestershire sauce, breadcrumbs, and eggs, and season with salt and pepper. Using your hands, combine mixture until evenly blended. Place half of meat-vegetable mixture into loaf pan and form making a wide and long indentation in center of meatloaf.
Unwrap cheeseball and place in indentation of meatloaf. Place remaining half of meat-vegetable mixture, sealing cheese inside meat. Slather ketchup on top of meat in an even layer. Bake until meat reaches an internal temperature of 155°, 45-60 minutes.
